- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar, plus more for the pan
- 1 (20 ounce) can pineapple rings, drained, reserve 1/4 cup juice
- 1/4 cup maraschino cherries, halved
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. Sprinkle a thin layer of sugar in the bottom of the pan.
- Melt 1/4 cup butter in a small saucepan. Pour the melted butter over the sugar in the pan. Arrange pineapple rings in the bottom of the pan. Place a cherry half in the center of each pineapple ring.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the remaining 1/2 cup butter and 3/4 cup sugar until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined. Stir in the reserved pineapple juice.
- Pour the batter evenly over the pineapple rings in the prepared pan.
- Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.
- Serve warm or at room temperature.
Notes
- For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
- Make sure to drain the pineapple rings well to prevent the cake from becoming soggy.
- You can substitute other fruits, such as peaches or apples, for the pineapple.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
