A classic dessert that’s both beautiful and delicious! This Pineapple Upside Down Cake is moist, buttery, and bursting with the sweet, tangy flavors of pineapple and caramel.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar, plus more for the pan
  • 1 (20 ounce) can pineapple rings, drained, reserve 1/4 cup juice
  • 1/4 cup maraschino cherries, halved
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. Sprinkle a thin layer of sugar in the bottom of the pan.
  2. Melt 1/4 cup butter in a small saucepan. Pour the melted butter over the sugar in the pan. Arrange pineapple rings in the bottom of the pan. Place a cherry half in the center of each pineapple ring.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a separate large bowl, cream together the remaining 1/2 cup butter and 3/4 cup sugar until light and fluffy. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined. Stir in the reserved pineapple juice.
  6. Pour the batter evenly over the pineapple rings in the prepared pan.
  7. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.
  9. Serve warm or at room temperature.

Notes

  • For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
  • Make sure to drain the pineapple rings well to prevent the cake from becoming soggy.
  • You can substitute other fruits, such as peaches or apples, for the pineapple.
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
