Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • For the Frosting:
  • 4 cups powdered sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup milk
  • 1 teaspoon peppermint extract
  • Red food coloring (optional)
  • For Garnish:
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the melted butter, sugar, cocoa powder, salt, and baking powder until well combined.
  3. Beat in the vanilla extract and eggs, one at a time, until smooth.
  4. Gradually add the flour and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  6. Let the brownies cool completely in the pan before frosting.
  7. For the frosting: In a large bowl, beat together the softened butter and powdered sugar until light and fluffy.
  8. Gradually add the milk and peppermint extract, mixing until smooth. Add red food coloring, if desired, until you reach your desired color.
  9. Frost the cooled brownies with the peppermint frosting. Sprinkle with crushed candy canes.
  10. Cut into squares and serve.

Notes

  • For a richer flavor, use dark cocoa powder.
  • If you don’t have peppermint extract, you can substitute with vanilla extract and add a few drops of peppermint oil.
  • Store leftover brownies in an airtight container at room temperature for up to 3 days.
