  • For the Pecan Filling:
  • 1 cup chopped pecans
  • ½ cup packed light brown sugar
  • ¼ cup (½ stick) unsalted butter, melted
  • 1 tablespoon light corn syrup
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together softened butter and both granulated and brown sugars until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in ½ cup of the chopped pecans.
  7. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
  9. While the cupcakes are cooling, prepare the pecan filling. In a medium bowl, combine the remaining 1 cup chopped pecans, brown sugar, melted butter, corn syrup, vanilla extract, and salt. Stir until well combined.
  10. Once the cupcakes are completely cool, spoon a generous amount of the pecan filling onto the top of each cupcake.
  11. Optional: Drizzle with caramel sauce or a dusting of powdered sugar before serving.
