- ¼ cup (½ stick) unsalted butter, melted

- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together softened butter and both granulated and brown sugars until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in ½ cup of the chopped pecans.
- Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the pecan filling. In a medium bowl, combine the remaining 1 cup chopped pecans, brown sugar, melted butter, corn syrup, vanilla extract, and salt. Stir until well combined.
- Once the cupcakes are completely cool, spoon a generous amount of the pecan filling onto the top of each cupcake.
- Optional: Drizzle with caramel sauce or a dusting of powdered sugar before serving.
