Description

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/4 cup ice water, plus more if needed
  • 45 ripe pears, such as Bosc or Anjou, peeled, cored, and thinly sliced
  • 1/4 cup granulated sugar, plus extra for sprinkling
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Make the dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the pears: In a bowl, toss the sliced pears with the granulated sugar, lemon juice, cinnamon, and nutmeg.
  3. Assemble the galette: On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
  4. Add the filling: Arrange the pear slices in a circular pattern, leaving a 1 1/2-inch border. Fold the edges of the dough over the pears, pleating as you go.
  5. Add egg wash & bake: Brush the dough with the beaten egg and sprinkle with extra sugar. Bake in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the crust is golden brown and the pears are tender.
  6. Cool and Serve: Let the galette cool slightly before serving. Serve warm or at room temperature.

  • For a richer crust, use all butter.
  • You can use store-bought pie crust to save time.
