  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar, plus more for the peaches
  • 56 medium peaches, peeled, pitted, and sliced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a small saucepan, melt 1/4 cup (1/2 stick) of the butter. Pour into the prepared cake pan. Sprinkle with 1/2 cup of the granulated sugar.
  3. Arrange peach slices in a decorative pattern over the melted butter and sugar. Sprinkle with cinnamon and nutmeg.
  4. In a large bowl, cream together the remaining 1/4 cup (1/2 stick) of softened butter and 1/2 cup of granulated sugar until light and fluffy.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Stir in the vanilla extract and eggs.
  7. Pour the batter evenly over the peaches in the prepared pan.
  8. Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.
  10. Serve warm or at room temperature.
