Description

These peach muffins are moist, delicious, and bursting with fresh peach flavor. Perfect for breakfast or a sweet treat!


Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup milk
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, peeled and diced
  • Optional: Turbinado sugar for topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced peaches.
  6. Fill each muffin liner about ¾ full.
  7. Sprinkle with turbinado sugar, if desired.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For best results, use ripe but firm peaches.
  • You can substitute frozen peaches (thawed and drained) for fresh peaches.
  • Store leftover muffins in an airtight container at room temperature for up to 3 days.
