Description

This rustic peach galette is a beautiful and delicious dessert that’s surprisingly easy to make. With a flaky crust and juicy, sweet peaches, it’s a perfect treat for summer. This recipe guides you through every step, ensuring a delightful galette every time.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/4 cup ice water
  • 6 medium peaches, peeled, pitted, and sliced
  • 1/4 cup granulated sugar, plus more for sprinkling
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the Dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, mixing until the dough just comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Peaches: In a bowl, combine the sliced peaches, granulated sugar, cornstarch, lemon juice, and cinnamon. Gently toss to combine and set aside.
  4. Assemble the Galette: On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
  5. Arrange the peach mixture in the center of the dough, leaving a 1 1/2-inch border.
  6. Fold the edges of the dough over the peaches, pleating as you go.
  7. Brush the dough with the beaten egg and sprinkle with granulated sugar.
  8. Bake: Bake in a preheated oven at 375°F (190°C) for 40-50 minutes, or until the crust is golden brown and the peaches are tender and bubbly.
  9. Let the galette cool slightly before serving.

Notes

  • For best results, use ripe but firm peaches.
  • You can add a touch of almond extract to the peach filling for extra flavor.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
