Description

These peach fritters are a delightful treat, combining the sweetness of ripe peaches with a crispy, golden-brown exterior. They’re perfect for breakfast, brunch, or a simple dessert.


Ingredients

  • 2 large ripe peaches, peeled and diced
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • Powdered sugar, for dusting (optional)
  • Cinnamon, for dusting (optional)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the diced peaches.
  5. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  6. Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
  7. Fry the fritters for 2-3 minutes per side, or until golden brown and cooked through.
  8. Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  9. Dust with powdered sugar and/or cinnamon, if desired.
  10. Serve warm and enjoy!
