  • 1 cup Bisquick baking mix
  • 1 cup milk
  • 1/4 cup granulated sugar, plus extra for sprinkling
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pour the undrained peaches into a 8×8 inch baking dish.
  3. In a medium bowl, whisk together the Bisquick, milk, 1/4 cup sugar, melted butter, and cinnamon until just combined. Do not overmix.
  4. Pour the batter evenly over the peaches.
  5. Sprinkle the top with a little extra sugar.
  6. Bake for 35-40 minutes, or until the cobbler is golden brown and the peaches are bubbly.
  7. Let cool slightly before serving. Serve warm with a scoop of vanilla ice cream, if desired.
