Instructions

  1. Prepare the Peaches: Wash, peel, and pit the peaches. Chop them into small pieces.
  2. Combine Ingredients: In a large, heavy-bottomed pot, combine the chopped peaches, sugar, lemon juice, cinnamon, cloves, and salt.
  3. Simmer and Stir: Bring the mixture to a simmer over medium heat, stirring frequently to prevent sticking. Reduce the heat to low and continue to simmer for about 1.5 to 2 hours, or until the peaches are very soft and the mixture has thickened to a jam-like consistency. Stir frequently, especially towards the end, to prevent scorching.
  4. Blend (Optional): For a smoother texture, you can use an immersion blender or transfer the peach mixture to a regular blender and blend until smooth. Be careful when blending hot liquids.
  5. Jar and Seal: Sterilize your jars and lids. Carefully ladle the hot peach butter into the sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims clean, place the lids on the jars, and screw on the bands.
  6. Process (Optional): If you want to store the peach butter at room temperature, process the jars in a boiling water bath for 10 minutes (adjust for altitude). Otherwise, let the jars cool completely and store them in the refrigerator for up to 2 weeks or in the freezer for up to 6 months.

Notes

  • For best results, use ripe peaches. The riper the peaches, the sweeter and more flavorful your peach butter will be.
  • Adjust the sugar to your taste. You can use less sugar if your peaches are very sweet.
  • If you don’t have an immersion blender, you can use a regular blender, but be careful when blending hot liquids.
