Instructions

  1. In a large bowl, whip the very cold heavy whipping cream using an electric mixer (handheld or stand mixer fitted with the whisk attachment) on medium-high speed until stiff peaks form. This usually takes 3-5 minutes. Be careful not to over-whip into butter.
  2. In a separate medium bowl, gently whisk together the cold sweetened condensed milk, vanilla extract, and vanilla bean paste (if using) until just combined.
  3. Gently fold about one-third of the whipped cream into the condensed milk mixture using a spatula to lighten it.
  4. Carefully fold the remaining whipped cream into the mixture in two additions, taking care to keep as much air in the mixture as possible. Stop folding just when no white streaks remain.
  5. Pour the mixture into a freezer-safe loaf pan (about 9×5 inches) or an airtight freezer container. Cover the surface directly with plastic wrap to prevent ice crystals.
