Description

These no-bake pumpkin truffles are the perfect fall treat! Made with simple ingredients and ready in under 30 minutes, they’re a delicious way to enjoy pumpkin spice season.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 6 ounces white chocolate, chopped
  • 1 tablespoon coconut oil (optional, for melting chocolate)
  • Chopped pecans or cinnamon sugar, for rolling (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, pumpkin puree, softened cream cheese, powdered sugar, pumpkin pie spice, and vanilla extract. Mix until well combined and a dough-like consistency forms.
  2. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  3. Chill the truffle balls in the refrigerator for at least 15 minutes to firm up.
  4. Melt the white chocolate. You can do this in a microwave-safe bowl in 30-second intervals, stirring in between, or over a double boiler. Stir in coconut oil if using to help with a smoother consistency.
  5. Dip each chilled truffle ball into the melted white chocolate, ensuring it’s fully coated. You can use a fork or a toothpick to help with dipping.
  6. Place the coated truffles back onto the parchment-lined baking sheet.
  7. If desired, immediately sprinkle with chopped pecans or roll in cinnamon sugar before the chocolate sets.
  8. Refrigerate the truffles for at least 30 minutes to allow the chocolate to harden completely.
  9. Store in an airtight container in the refrigerator.

Notes

  • For a richer flavor, you can add a pinch of ground ginger and cloves along with the pumpkin pie spice.
  • If you don’t have graham crackers, you can use crushed digestive biscuits or vanilla wafers.
