These no-bake pumpkin chocolate chip bars are the perfect easy dessert for fall! They’re soft, chewy, and packed with pumpkin and chocolate flavor, requiring no oven time.

- 1 cup (2 sticks) unsalted butter
- 1 (15 ounce) can pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 cups granulated sugar
- 3 cups all-purpose flour
- 1 cup chocolate chips, plus more for topping
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium saucepan, melt the butter over medium heat.
- Stir in the pumpkin puree, vanilla extract, pumpkin pie spice, and salt. Cook for 2-3 minutes, stirring constantly, until fragrant.
- Add the granulated sugar and stir until well combined.
- Gradually add the flour, mixing until just combined. Do not overmix.
- Fold in the chocolate chips.
- Press the mixture evenly into the prepared baking pan.
- Sprinkle additional chocolate chips over the top, if desired.
- Refrigerate for at least 2 hours, or until firm.
- Lift the bars out of the pan using the parchment paper overhang. Cut into squares and serve chilled.
Notes
- For best results, use pure pumpkin puree, not pumpkin pie filling.
- Ensure the bars are completely chilled before cutting for clean slices.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
