- 1 cup rolled oats
- ½ cup peanut butter (or any nut butter)
- ½ cup honey or maple syrup
- ½ cup mini chocolate chips
- ⅓ cup ground flaxseed
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium bowl, combine all ingredients.
- Mix well until everything is thoroughly combined. The mixture should be sticky enough to hold together.
- Roll the mixture into 1-inch balls.
- Place the energy bites on a plate or in an airtight container.
- Refrigerate for at least 30 minutes to firm up before serving.
- Store in the refrigerator for up to a week.
Notes
- Feel free to customize with your favorite add-ins, such as shredded coconut, chopped nuts, or dried fruit.
- For a nut-free version, use sunflower seed butter instead of peanut butter.
- If the mixture is too dry, add a little more honey or maple syrup. If it’s too wet, add a little more oats.
