  • Yield: 20 bites 1x
  • Diet: Vegetarian

Ingredients

Scale
  • 1 cup rolled oats
  • ½ cup peanut butter (or any nut butter)
  • ½ cup honey or maple syrup
  • ½ cup mini chocolate chips
  • ⅓ cup ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, combine all ingredients.
  2. Mix well until everything is thoroughly combined. The mixture should be sticky enough to hold together.
  3. Roll the mixture into 1-inch balls.
  4. Place the energy bites on a plate or in an airtight container.
  5. Refrigerate for at least 30 minutes to firm up before serving.
  6. Store in the refrigerator for up to a week.

Notes

  • Feel free to customize with your favorite add-ins, such as shredded coconut, chopped nuts, or dried fruit.
  • For a nut-free version, use sunflower seed butter instead of peanut butter.
  • If the mixture is too dry, add a little more honey or maple syrup. If it’s too wet, add a little more oats.
