This No-Bake Chocolate Eclair Cake is a decadent dessert that requires no oven! Layers of graham crackers, creamy vanilla pudding, and a rich chocolate ganache come together for an irresistible treat.

- 3 boxes (3.5 oz each) instant vanilla pudding mix
- 6 cups cold milk
- 3 cups heavy cream
- 1 (14.4 oz) package graham crackers
- Chocolate Ganache:
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1 tablespoon butter
Instructions
- In a large bowl, whisk together the vanilla pudding mixes and cold milk. Refrigerate for 5 minutes to set.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pudding mixture.
- In a 9×13 inch dish, create a layer of graham crackers.
- Spread a layer of the pudding mixture over the graham crackers.
- Repeat layers: graham crackers, pudding.
- For the chocolate ganache, heat the heavy cream and butter in a saucepan over medium heat until simmering.
- Remove from heat and add the chocolate chips. Let sit for 1 minute, then whisk until smooth.
- Pour the ganache over the top layer of pudding.
- Refrigerate for at least 4 hours, or preferably overnight, before serving.
Notes
- For a richer flavor, use whole milk instead of low-fat milk.
- You can add a layer of chocolate pudding for extra chocolate flavor.
- Garnish with chocolate shavings or sprinkles before serving.
