Description

This No-Bake Chocolate Eclair Cake is a decadent dessert that requires no oven! Layers of graham crackers, creamy vanilla pudding, and a rich chocolate ganache come together for an irresistible treat.


Ingredients

  • 3 boxes (3.5 oz each) instant vanilla pudding mix
  • 6 cups cold milk
  • 3 cups heavy cream
  • 1 (14.4 oz) package graham crackers
  • Chocolate Ganache:
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon butter

Instructions

  1. In a large bowl, whisk together the vanilla pudding mixes and cold milk. Refrigerate for 5 minutes to set.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the pudding mixture.
  4. In a 9×13 inch dish, create a layer of graham crackers.
  5. Spread a layer of the pudding mixture over the graham crackers.
  6. Repeat layers: graham crackers, pudding.
  7. For the chocolate ganache, heat the heavy cream and butter in a saucepan over medium heat until simmering.
  8. Remove from heat and add the chocolate chips. Let sit for 1 minute, then whisk until smooth.
  9. Pour the ganache over the top layer of pudding.
  10. Refrigerate for at least 4 hours, or preferably overnight, before serving.
