- 1/2 cup (1 stick) cold unsalted butter, cut into cubes

- 6–8 medium nectarines, sliced
- 1/4 cup granulated sugar, plus extra for sprinkling
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1/4 teaspoon ground cinnamon
- Egg wash (1 egg beaten with 1 tablespoon water)
Instructions
- Make the Crust: In a food processor, pulse the flour and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
- Gradually add the ice water, pulsing until the dough just comes together.
- Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling: In a bowl, combine the sliced nectarines, sugar, lemon juice, cornstarch, and cinnamon. Gently toss to combine.
- Assemble the Tart: Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch circle.
- Transfer the dough to a baking sheet lined with parchment paper.
- Arrange the nectarine slices in the center of the dough, leaving a 1-inch border.
- Fold the edges of the dough over the filling, pleating as needed.
- Brush the crust with egg wash and sprinkle with extra sugar.
- Bake: Bake for 40-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool slightly before serving.
Notes
- For a richer crust, use all butter.
- Feel free to add a pinch of nutmeg or cardamom to the filling.
- Serve warm or at room temperature.
