Description

  • 68 medium nectarines, sliced
  • 1/4 cup granulated sugar, plus extra for sprinkling
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1/4 teaspoon ground cinnamon
  • Egg wash (1 egg beaten with 1 tablespoon water)

Instructions

  1. Make the Crust: In a food processor, pulse the flour and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, pulsing until the dough just comes together.
  3. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Prepare the Filling: In a bowl, combine the sliced nectarines, sugar, lemon juice, cornstarch, and cinnamon. Gently toss to combine.
  5. Assemble the Tart: Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch circle.
  6. Transfer the dough to a baking sheet lined with parchment paper.
  7. Arrange the nectarine slices in the center of the dough, leaving a 1-inch border.
  8. Fold the edges of the dough over the filling, pleating as needed.
  9. Brush the crust with egg wash and sprinkle with extra sugar.
  10. Bake: Bake for 40-50 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Let cool slightly before serving.
