- 6–8 ripe nectarines, peeled, pitted, and sliced
- 1 cup all-purpose flour
- 1 cup granulated sugar, plus extra for sprinkling
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Optional: Cinnamon for sprinkling
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the melted butter, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared baking dish.
- Arrange the sliced nectarines evenly over the batter.
- Sprinkle with extra sugar and, optionally, cinnamon.
- Bake for 45-55 minutes, or until the cobbler is golden brown and the nectarines are tender and bubbly.
- Let cool slightly before serving. Serve warm with a scoop of vanilla ice cream or whipped cream.
Notes
- For a crispier topping, use cold butter.
- Feel free to add a squeeze of lemon juice to the nectarines before baking for extra flavor.
- Other stone fruits like peaches or plums can be used as a substitute.
