  • 1 cup all-purpose flour
  • 1 cup granulated sugar, plus extra for sprinkling
  • 2 teaspoons baking powder

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Optional: Cinnamon for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the melted butter, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish.
  6. Arrange the sliced nectarines evenly over the batter.
  7. Sprinkle with extra sugar and, optionally, cinnamon.
  8. Bake for 45-55 minutes, or until the cobbler is golden brown and the nectarines are tender and bubbly.
