Description

These adorable and slightly creepy Monster Eye Cupcakes are a delightful treat for Halloween or any monster-themed celebration. They feature moist chocolate cupcakes topped with vibrant green frosting and edible candy eyes, making them as fun to look at as they are to eat!

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup hot water
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • Green food coloring
  • For Decoration:
  • Candy eyes
  • Black sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together milk, vegetable oil, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Carefully stir in the hot water until the batter is smooth. The batter will be thin.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
  10. Gradually add the powdered sugar, alternating with the milk, until smooth and fluffy. Stir in the vanilla extract.
  11. Add green food coloring, a few drops at a time, until you achieve your desired monster-green shade.
  12. Once the cupcakes are completely cool, frost them generously with the green frosting.
  13. Press candy eyes into the frosting to resemble monster eyes. Add black sprinkles around the eyes if desired for extra detail.
  14. Serve and enjoy your spooky Monster Eye Cupcakes!

Notes

  • For a richer chocolate flavor, you can use coffee instead of hot water.
  • Ensure your butter is at room temperature for the creamiest frosting.
  • Experiment with different sizes and styles of candy eyes for a variety of monster looks.
  • These cupcakes can be stored in an airtight container at room temperature for up to 3 days.
