- 6 ounces bittersweet chocolate, chopped
- 6 tablespoons (3 ounces) unsalted butter, cut into cubes
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- Pinch of salt
- Butter and cocoa powder, for preparing ramekins
- Vanilla ice cream or fresh berries, for serving (optional)
Instructions
- Preheat oven to 425°F (220°C). Butter and cocoa powder six 6-ounce ramekins, tapping out any excess cocoa.
- In a heatproof bowl set over a pan of simmering water (or in the microwave in 30-second intervals, stirring in between), melt the chocolate and butter, stirring until smooth.
- In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened.
- Gently whisk the melted chocolate mixture into the egg mixture until combined.
- Sift in the flour and salt and gently fold until just combined; do not overmix.
- Divide the batter evenly among the prepared ramekins.
- Bake for 12-15 minutes, or until the edges are set but the center is still soft.
- Let the cakes cool in the ramekins for a minute or two before inverting them onto plates.
- Serve immediately with vanilla ice cream or fresh berries, if desired.
Notes
- For a perfectly molten center, don’t overbake. The cooking time may vary depending on your oven.
- You can prepare the batter a few hours in advance and refrigerate it. Bring it to room temperature before baking.
- If you don’t have ramekins, you can use oven-safe mugs.
