  • 6 tablespoons (3 ounces) unsalted butter, cut into cubes
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • Butter and cocoa powder, for preparing ramekins
  • Vanilla ice cream or fresh berries, for serving (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Butter and cocoa powder six 6-ounce ramekins, tapping out any excess cocoa.
  2. In a heatproof bowl set over a pan of simmering water (or in the microwave in 30-second intervals, stirring in between), melt the chocolate and butter, stirring until smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened.
  4. Gently whisk the melted chocolate mixture into the egg mixture until combined.
  5. Sift in the flour and salt and gently fold until just combined; do not overmix.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 12-15 minutes, or until the edges are set but the center is still soft.
  8. Let the cakes cool in the ramekins for a minute or two before inverting them onto plates.
  9. Serve immediately with vanilla ice cream or fresh berries, if desired.

Notes

  • For a perfectly molten center, don’t overbake. The cooking time may vary depending on your oven.
