Ingredients
Scale
- 1 package (2 sheets) refrigerated pie crusts
- 4 cups thinly sliced peeled apples (about 4 medium apples)
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, cut into small pieces
- 1/4 cup caramel sauce, for drizzling
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples evenly.
- Unroll the pie crusts. Using a 4-inch round cookie cutter, cut out 12 circles from the pie crusts.
- Gently press 6 of the pie crust circles into the prepared muffin tin cups, forming the bottom crusts.
- Divide the apple filling evenly among the 6 muffin cups. Dot the top of the filling with the small pieces of butter.
- Place the remaining 6 pie crust circles on top of the filling. Crimp the edges of the top and bottom crusts together to seal. Cut small vents in the top crusts with a knife.
- Brush the tops of the pies with the beaten egg wash and sprinkle with coarse sugar, if desired.
- Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the mini pies cool in the muffin tin for 10-15 minutes before carefully removing them to a wire rack to cool completely.
- Drizzle with caramel sauce before serving.
Notes
- For a richer caramel flavor, you can use homemade caramel sauce.
- If you don’t have a muffin tin, you can use mini tart pans or bake the pies on a baking sheet. Adjust baking time as needed.
- These mini pies can be made ahead of time and reheated gently before serving.
