- 3 medium apples (such as Honeycrisp or Fuji), peeled, cored, and diced (about 2 cups)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon granulated sugar
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup packed brown sugar
- 1/4 cup (1/2 stick) cold unsalted butter, cut into small cubes
Instructions
- Preheat oven to 375°F (190°C). Grease 6 mini ramekins or muffin cups.
- In a medium bowl, toss diced apples with lemon juice, cinnamon, nutmeg, and 1 tablespoon of sugar. Divide the apple mixture evenly among the prepared ramekins.
- In a separate bowl, combine flour, oats, brown sugar, and cold butter. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the oat topping evenly over the apples in each ramekin.
- Place the ramekins on a baking sheet and bake for 25-30 minutes, or until the topping is golden brown and the apples are tender and bubbly.
- Let cool slightly before serving. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
- For a richer topping, add 1/4 cup chopped pecans or walnuts to the oat mixture.
- If you don’t have mini ramekins, you can make one larger apple crisp in an 8×8 inch baking dish. Adjust baking time accordingly.
- These can be made ahead of time and reheated before serving.
