- For the Crust:
- 1 ½ cups graham cracker crumbs
- ⅓ cup melted unsalted butter
- 2 tablespoons granulated sugar
- For the Filling:
- 2 (8-ounce) packages cream cheese, softened
- ⅔ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- For the Topping:
- 2 medium apples, peeled, cored, and diced
- ¼ cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a small bowl, combine graham cracker crumbs, 2 tablespoons granulated sugar, and melted butter. Mix well. Press about 1 tablespoon of the mixture into the bottom of each muffin liner.
- In a medium bowl, beat cream cheese and ⅔ cup granulated sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
- Spoon filling evenly over the crusts in the muffin liners.
- Bake for 18-22 minutes, or until the edges are set and the centers are almost set. Let cool completely in the muffin tin.
- While cheesecakes are cooling, prepare the topping. In a medium saucepan, combine diced apples, brown sugar, cinnamon, and lemon juice. Cook over medium heat, stirring occasionally, until apples are tender, about 8-10 minutes.
- Once cheesecakes are cool, spoon the apple topping over each one.
- Chill for at least 1 hour before serving.
Notes
- For a smoother topping, you can add a tablespoon of cornstarch mixed with a little water to the apple mixture during cooking.
- These can be made a day in advance and stored in the refrigerator.
- Garnish with a dollop of whipped cream or a sprinkle of chopped nuts if desired.
