Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- In a large bowl, cream together granulated sugar and softened butter until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
- In a separate small bowl, whisk together pumpkin puree, buttermilk, and maple syrup.
- Add the dry ingredients to the wet ingredients in three additions, alternating with the pumpkin mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for 5-10 minutes before transferring them to a wire rack to cool completely.
- While the cupcakes cool, prepare the frosting: In a large bowl, beat together softened cream cheese and butter until smooth and creamy. Beat in vanilla extract and a pinch of salt.
- Gradually add the sifted powdered sugar, alternating with the milk or cream, until the frosting is smooth and has a spreadable consistency.
- Once the cupcakes are completely cool, frost them generously with the cream cheese frosting.
Notes
- For extra flavor, you can add ½ cup of chopped pecans or walnuts to the batter.
- Ensure your pumpkin puree is not pumpkin pie filling, as it contains added sugar and spices.
