Description

These easy Maple Pumpkin Cookies are perfectly spiced and drizzled with a sweet maple glaze. They’re a delightful fall treat that’s sure to become a holiday favorite!


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 (15-ounce) can pumpkin puree (not pumpkin pie filling)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • For the Maple Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Stir in the pumpkin puree until smooth.
  5. In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. Prepare the Maple Glaze: In a small bowl, whisk together the powdered sugar, maple syrup, and vanilla extract until smooth and drizzly. Add more maple syrup or powdered sugar as needed to reach desired consistency.
  11. Once the cookies are completely cool, drizzle them with the maple glaze. Let the glaze set before serving.

Notes

  • For a stronger pumpkin flavor, use a good quality pumpkin puree.
  • If you don’t have all the spices, a good quality pumpkin pie spice blend can be substituted (use about 1.5 teaspoons).
  • The glaze can be adjusted to your sweetness preference.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
