These easy Maple Pumpkin Cookies are perfectly spiced and drizzled with a sweet maple glaze. They’re a delightful fall treat that’s sure to become a holiday favorite!

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 (15-ounce) can pumpkin puree (not pumpkin pie filling)
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- For the Maple Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons pure maple syrup
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Stir in the pumpkin puree until smooth.
- In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the Maple Glaze: In a small bowl, whisk together the powdered sugar, maple syrup, and vanilla extract until smooth and drizzly. Add more maple syrup or powdered sugar as needed to reach desired consistency.
- Once the cookies are completely cool, drizzle them with the maple glaze. Let the glaze set before serving.
Notes
- For a stronger pumpkin flavor, use a good quality pumpkin puree.
- If you don’t have all the spices, a good quality pumpkin pie spice blend can be substituted (use about 1.5 teaspoons).
- The glaze can be adjusted to your sweetness preference.
- Store cooled cookies in an airtight container at room temperature for up to 3 days.
