Description

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup pure pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup heavy cream
  • ¼ cup pure maple syrup

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and ¼ cup granulated sugar. Stir in melted butter until combined. Press mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes. Let cool.
  3. In a large bowl, beat cream cheese and 1 cup granulated sugar until smooth. Beat in pumpkin puree, eggs one at a time, vanilla extract, pumpkin pie spice, cinnamon, and salt until just combined.
  4. In a small bowl, whisk together heavy cream and maple syrup. Gradually beat this mixture into the cream cheese mixture until smooth.
  5. Pour filling over the prepared crust.
  6. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  8. Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours, or preferably overnight.
  9. Before serving, run a knife around the edge of the pan and release the springform.

Notes

  • For an even richer flavor, you can add a splash of bourbon to the filling.
  • Garnish with whipped cream and a drizzle of maple syrup before serving.
  • This cheesecake can be made up to 2 days in advance and stored in the refrigerator.
