- 1 cup pumpkin puree (not pumpkin pie filling)
- 1/4 cup pure maple syrup
- 1/2 cup milk (any kind)
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
- In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate small bowl, whisk together the pumpkin puree and maple syrup.
- Gradually add the pumpkin mixture to the butter mixture, alternating with the dry ingredients, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
- Stir in the milk until the batter is smooth. If using, fold in the nuts.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
Notes
- For a sweeter bread, you can increase the granulated sugar by 1/4 cup.
- If you don’t have fresh milk, you can use a milk substitute like almond milk or soy milk.
- This bread can be stored at room temperature, wrapped tightly in plastic wrap, for up to 3 days. It also freezes well.
