Ingredients

  • 1 cup warm milk (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 4 ½ cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • Vegetable oil, for frying
  • For the Maple Glaze:
  • 2 cups powdered sugar
  • ½ cup pure maple syrup
  • ¼ cup unsalted butter, melted
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, combine warm milk and yeast. Let stand for 5-10 minutes until foamy.
  2. Stir in granulated sugar, eggs, melted butter, and vanilla extract.
  3. In a separate bowl, whisk together flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and roll it out to ½-inch thickness on a floured surface. Cut out donuts using a donut cutter or two different sized round cutters. Place donuts on parchment-lined baking sheets, cover, and let rise for another 30 minutes.
  7. Heat about 2-3 inches of vegetable oil in a large, heavy-bottomed pot or Dutch oven to 350°F (175°C).
  8. Carefully fry the donuts in batches, about 1-2 minutes per side, until golden brown. Remove with a slotted spoon and drain on paper towels.
  9. For the Maple Glaze: Whisk together powdered sugar, maple syrup, melted butter, milk, and vanilla extract until smooth.
  10. Dip each warm donut into the maple glaze, letting excess drip off. Place on a wire rack to set.

  • Ensure your milk is warm, not hot, to activate the yeast properly.
  • Don’t overcrowd the pot when frying to maintain the oil temperature.
  • For a thinner glaze, add a little more milk; for a thicker glaze, add more powdered sugar.
