Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups packed light brown sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, whisk together the melted butter and brown sugar until well combined.
  3. Stir in the maple syrup and vanilla extract until smooth.
  4. Add the egg and whisk vigorously until the mixture is slightly lighter in color and thickened, about 1-2 minutes.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Fold in the chopped pecans or walnuts, if using.
  8. Spread the batter evenly into the prepared baking pan.
  9. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs attached.
  10. Let the blondies cool completely in the pan on a wire rack before cutting into squares.

Notes

  • For an extra maple kick, drizzle a little extra maple syrup over the blondies once they are slightly cooled.
  • Store cooled blondies in an airtight container at room temperature for up to 3 days.
  • You can also add chocolate chips or white chocolate chips for a different flavor profile.
