  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 46 tablespoons ice water
  • For the Mango Curd:
  • 1 1/2 cups fresh mango puree (from about 2 large ripe mangoes)
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, cubed
  • 2 large eggs
  • 1 large egg yolk
  • 1 tablespoon lime juice
  • Pinch of salt

Instructions

  1. Prepare the Crust: In a food processor, combine flour, powdered sugar, and salt. Pulse to combine. Add cold butter and pulse until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, pulsing until the dough just comes together.
  3. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan.
  5. Trim the edges and prick the bottom with a fork.
  6. Bake the crust for 15-20 minutes, or until golden brown. Let cool completely.
  7. Make the Mango Curd: In a saucepan, whisk together mango puree, sugar, eggs, and egg yolk.
  8. Cook over medium heat, stirring constantly, until the curd thickens and coats the back of a spoon (about 5-7 minutes).
  9. Remove from heat and whisk in the butter, lime juice, and salt until smooth.
  10. Pour the mango curd into the cooled tart crust.
  11. Refrigerate for at least 2 hours, or until the curd is set.
  12. Serve: Garnish with fresh mango slices or whipped cream, if desired.

Notes

  • For a smoother curd, strain it through a fine-mesh sieve after cooking.
  • If you don’t have fresh mangoes, you can use frozen mango puree, thawed completely.
  • The tart can be stored in the refrigerator for up to 3 days.
