Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
- In a small bowl, combine buttermilk, lemon zest, and lemon juice.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients.
- Pour half of the batter into the prepared cake pan.
- In a separate bowl, mix together the raspberry preserves and fresh raspberries.
- Spoon the raspberry mixture over the batter in the pan.
- Pour the remaining batter over the raspberry mixture.
- Use a knife to swirl the raspberry mixture and batter together.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Dust with powdered sugar and garnish with fresh raspberries before serving.
