Description

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice
  • 1 cup raspberry preserves
  • 1/2 cup fresh raspberries, plus more for garnish
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a small bowl, combine buttermilk, lemon zest, and lemon juice.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients.
  6. Pour half of the batter into the prepared cake pan.
  7. In a separate bowl, mix together the raspberry preserves and fresh raspberries.
  8. Spoon the raspberry mixture over the batter in the pan.
  9. Pour the remaining batter over the raspberry mixture.
  10. Use a knife to swirl the raspberry mixture and batter together.
  11. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  12. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  13. Dust with powdered sugar and garnish with fresh raspberries before serving.
