Description

These Lemon Raspberry Cake Pops are the perfect combination of zesty lemon and sweet raspberry flavors, all in a fun, bite-sized treat! They’re ideal for parties, special occasions, or just a sweet craving.

Ingredients

Scale
  • 1 box (15.25 ounces) lemon cake mix
  • Ingredients listed on the cake mix box (usually eggs, oil, and water)
  • 1 cup raspberry frosting (store-bought or homemade)
  • 12 ounces white chocolate melting wafers
  • Sprinkles for decoration
  • Lollipop sticks

Instructions

  1. Bake the Cake: Prepare and bake the lemon cake according to the box instructions. Let it cool completely.
  2. Crumble the Cake: Once cooled, crumble the cake into a large bowl.
  3. Mix with Frosting: Add the raspberry frosting to the crumbled cake and mix until well combined. The mixture should be moist enough to form into balls.
  4. Form the Cake Pops: Roll the cake mixture into 1-inch balls. Place the balls on a baking sheet lined with parchment paper and chill in the freezer for at least 15 minutes.
  5. Melt the Chocolate: Melt the white chocolate wafers according to package directions, stirring until smooth.
  6. Dip the Sticks: Dip the tip of a lollipop stick into the melted chocolate and insert it into a cake ball, about halfway. Repeat with all cake balls.
  7. Dip the Cake Pops: Dip each cake pop into the melted chocolate, turning to coat completely. Let the excess chocolate drip off.
  8. Decorate: Immediately decorate with sprinkles before the chocolate sets.
  9. Chill and Serve: Place the finished cake pops back on the parchment-lined baking sheet and refrigerate for at least 30 minutes to allow the chocolate to set completely. Serve and enjoy!

Notes

  • For a smoother finish, use a candy melting pot or double boiler to melt the chocolate.
  • If the chocolate is too thick, add a teaspoon of vegetable oil or shortening to thin it out.
  • Get creative with decorations! Use different sprinkles, drizzles of colored chocolate, or edible glitter.
  • Store leftover cake pops in an airtight container in the refrigerator for up to 3 days.
