Ingredients

  • 1/2 cup fresh lemon juice (from about 23 lemons)

  2. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved and the mixture just begins to simmer. Do not boil.
  3. Remove from heat and stir in the lemon juice. The mixture will thicken slightly.
  4. Pour the lemon posset into individual serving glasses or ramekins.
  5. Refrigerate for at least 2 hours, or preferably overnight, until set.
  6. Garnish with lemon zest before serving.
