- 1 1/2 cups heavy cream
- 1/2 cup granulated sugar
- 1/2 cup fresh lemon juice (from about 2–3 lemons)
- Lemon zest, for garnish
Instructions
- In a saucepan, combine the heavy cream and sugar.
- Heat over medium heat, stirring occasionally, until the sugar is completely dissolved and the mixture just begins to simmer. Do not boil.
- Remove from heat and stir in the lemon juice. The mixture will thicken slightly.
- Pour the lemon posset into individual serving glasses or ramekins.
- Refrigerate for at least 2 hours, or preferably overnight, until set.
- Garnish with lemon zest before serving.
Notes
- For a smoother posset, strain the mixture through a fine-mesh sieve after adding the lemon juice.
- The thickness of the posset will depend on the lemon juice and the chilling time.
