Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 2 large eggs
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a food processor, combine 1 1/2 cups flour, 1/2 cup sugar, and salt. Pulse to combine. Add cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Press half of the crumb mixture into the prepared pan. Bake for 15 minutes.
  4. In a bowl, whisk together the remaining sugar, flour, brown sugar, and lemon zest.
  5. In a separate bowl, whisk together lemon juice, eggs, and baking powder.
  6. Pour the lemon mixture over the baked crust. Sprinkle the remaining crumb topping over the lemon filling.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the filling is set.
  8. Let cool completely before cutting into bars.

  • For extra lemon flavor, add a tablespoon of lemon extract to the filling.
