- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup packed light brown sugar
- Zest of 2 lemons
- 1/4 cup fresh lemon juice
- 2 large eggs
- 1/4 teaspoon baking powder
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a food processor, combine 1 1/2 cups flour, 1/2 cup sugar, and salt. Pulse to combine. Add cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the prepared pan. Bake for 15 minutes.
- In a bowl, whisk together the remaining sugar, flour, brown sugar, and lemon zest.
- In a separate bowl, whisk together lemon juice, eggs, and baking powder.
- Pour the lemon mixture over the baked crust. Sprinkle the remaining crumb topping over the lemon filling.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is set.
- Let cool completely before cutting into bars.
Notes
- For extra lemon flavor, add a tablespoon of lemon extract to the filling.
- Make sure your butter is cold for the best crumb topping texture.
- Store bars in an airtight container at room temperature for up to 3 days.
