  • 1 teaspoon baking powder

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a small bowl, combine buttermilk, lemon juice, and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the blueberries.
  7. Pour batter into the prepared pan and bake for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. Once cooled, drizzle with lemon glaze, if desired.

Notes

  • For a richer flavor, use full-fat buttermilk.
  • Make sure your butter is softened but not melted.
  • Gently fold in the blueberries to prevent them from bursting.
  • To prevent blueberries from sinking, toss them in a tablespoon of flour before adding them to the batter.
