This no-bake strawberry shortcake icebox cake layers sweetened whipped cream, fresh strawberries, and crisp graham crackers for a refreshing, easy dessert that’s perfect for a Labor Day cookout. No oven required—just a little time in the fridge to set.

- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (14.3-ounce) box graham crackers (about 15 full sheets)
- 1 1/2 pounds fresh strawberries, hulled and sliced (about 4 cups)
- 3 tablespoons granulated sugar (for strawberries)
- Pinch of salt
- Optional: additional strawberries and mint leaves for garnish
Instructions
- In a large bowl, combine sliced strawberries with granulated sugar and a pinch of salt. Stir gently and let sit for 15 minutes to release juices.
- In a separate large bowl or stand mixer, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Line the bottom of a 9×13-inch baking dish with a single layer of graham crackers, breaking pieces as needed to fit.
- Spread about one-third of the whipped cream evenly over the graham crackers. Top with half of the macerated strawberries (use a slotted spoon to drain excess juice).
- Add another layer of graham crackers, pressing them gently into the cream. Spread another third of the whipped cream over the crackers, then top with the remaining strawberries (again using a slotted spoon).
- Finish with a final layer of graham crackers, then spread the remaining whipped cream over the top, covering completely. Cover with plastic wrap and refrigerate for at least 6 hours or overnight (preferred).
- Before serving, garnish with fresh strawberry slices and mint leaves if desired. Slice and serve cold.
Notes
- For best results, allow the cake to chill for at least 8 hours so the graham crackers soften fully and the flavors meld.
- You can substitute half of the heavy cream with a stabilized whipped topping if you prefer a firmer structure.
- If fresh strawberries aren’t in season, frozen (thawed and drained) work well too.
- This cake can be assembled a day ahead—perfect for holiday entertaining.
