Description

Celebrate Labor Day with these easy no-bake berry cheesecake dessert cups. Layers of creamy cheesecake filling, fresh berries, and crunchy graham cracker crumble make the perfect individual treat for your barbecue or picnic.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tablespoons berry jam (optional, for drizzling)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly moistened.
  2. Divide the crumb mixture evenly among 6 dessert cups or small glasses (about ¼ cup each). Press down gently to form a crust layer. Set aside.
  3. In a large mixing bowl, beat cream cheese with an electric mixer until smooth. Add powdered sugar and vanilla extract; beat until creamy.
  4. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined and smooth.
  5. Spoon or pipe the cheesecake filling over the crust layers, dividing evenly among the cups. Smooth the tops.
  6. Top each cup with a generous layer of fresh mixed berries. If desired, warm the berry jam slightly and drizzle over the berries.
  7. Refrigerate for at least 2 hours (or up to overnight) to set. Garnish with mint leaves before serving.

Notes

  • Make ahead: These cups can be assembled up to 24 hours in advance; keep refrigerated.
  • For a lighter version, use reduced-fat cream cheese and light whipped topping.
  • Try other fruits like sliced peaches or blackberries for variation.
  • If you prefer a firmer crust, freeze the cups for 15 minutes before adding the filling.
