Description

Celebrate Labor Day with these festive, easy-to-make cupcakes topped with a creamy vanilla buttercream and patriotic sprinkles. Perfect for your end-of-summer barbecue or picnic.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • For the frosting: 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 23 tablespoons heavy cream
  • Red, white, and blue sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  4. Gradually add flour mixture to butter mixture, alternating with milk, beginning and ending with flour. Mix until just combined.
  5. Divide batter evenly among prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into center comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting: In a large bowl, beat butter until creamy. Gradually add powdered sugar, beating on low speed. Add vanilla and heavy cream, then beat on high until light and fluffy, about 2 minutes.
  8. Frost cooled cupcakes and top with red, white, and blue sprinkles.

Notes

  • For a richer flavor, use buttermilk instead of whole milk.
  • Store unfrosted cupcakes in an airtight container at room temperature for up to 2 days. Frosted cupcakes are best enjoyed within 24 hours.
  • You can also use store-bought vanilla frosting to save time.
