- 4 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 3 cups sliced fresh peaches (about 3–4 large peaches)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 3/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, gently toss the mixed berries and sliced peaches with the granulated sugar, cornstarch, lemon juice, and vanilla extract until well combined. Pour the fruit mixture into the prepared baking dish and spread evenly.
- In a separate medium bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some larger clumps.
- Sprinkle the oat crumble topping evenly over the fruit filling.
- Bake for 40-45 minutes, or until the fruit is bubbling around the edges and the topping is golden brown and crisp. Let cool on a wire rack for at least 15 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.
Notes
- You can substitute any combination of summer fruits, such as nectarines, plums, or cherries, for the berries and peaches.
- For a gluten-free version, use a gluten-free all-purpose flour blend and certified gluten-free oats.
- To make ahead, assemble the crisp (without baking), cover, and refrigerate for up to 24 hours. Add 5-10 minutes to the baking time if baking straight from the fridge.
