Description

This easy Labor Day cake is a moist vanilla layer cake with fresh strawberries and cream cheese frosting, perfect for your end-of-summer barbecue.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  4. Gradually add flour mixture to butter mixture, alternating with milk, beginning and ending with flour. Mix until just combined.
  5. Fold in sliced strawberries gently.
  6. Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. For frosting: In a large bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, beating until light and fluffy. Mix in vanilla and heavy cream.
  8. Once cakes are completely cool, spread frosting between layers and over top and sides. Garnish with additional strawberry slices if desired.
  9. Refrigerate for at least 1 hour before serving. Enjoy!

Notes

  • For a red, white, and blue theme, add blueberries to the batter or as garnish.
  • If strawberries are very juicy, pat them dry with paper towels before folding into batter to prevent sogginess.
