Description

Learn how to make adorable Jack o’ Lantern macarons, perfect for Halloween. These festive treats feature a vibrant orange shell with a spooky, smiling jack o’ lantern face.

Ingredients

Scale
  • For the Macaron Shells:
  • 1 ½ cups (150g) almond flour, finely ground
  • 1 ¼ cups (125g) powdered sugar
  • 3 large egg whites, room temperature
  • ¼ teaspoon cream of tartar
  • ½ cup (100g) granulated sugar
  • Orange gel food coloring
  • Black gel food coloring
  • 1 teaspoon vanilla extract
  • For the Filling (Buttercream):
  • ½ cup (113g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract
  • Orange gel food coloring

Instructions

  1. Prepare the Macaron Shells:
  2. Sift almond flour and powdered sugar together twice into a large bowl.
  3. In a separate clean bowl, whisk egg whites and cream of tartar until foamy. Gradually add granulated sugar, whisking until stiff, glossy peaks form (meringue).
  4. Add vanilla extract and a few drops of orange gel food coloring to the meringue. Gently fold the dry ingredients into the meringue in two additions until the batter reaches a lava-like consistency (macaronage).
  5. Fill a piping bag fitted with a round tip with the batter. Pipe small rounds (about 1-inch) onto baking sheets lined with parchment paper.
  6. Tap the baking sheets firmly on the counter to release air bubbles.
  7. Let the piped macarons sit at room temperature for 30-60 minutes, or until a skin forms.
  8. Preheat oven to 300°F (150°C).
  9. Bake for 12-15 minutes, or until the shells are firm and do not wiggle. Let cool completely on the baking sheets.
  10. Decorate the Jack o’ Lantern Faces:
  11. Once cooled, use black gel food coloring mixed with a tiny bit of vodka or clear extract to paint jack o’ લગan faces onto half of the macaron shells.
  12. Prepare the Buttercream Filling:
  13. Beat softened butter until creamy. Gradually add powdered sugar, milk, and vanilla extract, beating until smooth and fluffy.
  14. Add a few drops of orange gel food coloring to achieve a desired pumpkin color.
  15. Assemble the Macarons:
  16. Pair cooled macaron shells. Pipe a dollop of filling onto the flat side of one shell and sandwich with another shell.
  17. Chill assembled macarons for at least 30 minutes before serving to allow the flavors to meld and the shells to soften slightly.

Notes

  • Ensure all equipment is clean and dry, especially for the meringue.
  • Do not overmix the macaron batter, as this will result in flat shells.
  • Drying time for the shells can vary depending on humidity.
  • The vodka/clear extract is used to thin the gel food coloring for painting, and the alcohol evaporates during drying.
  • You can also use melted black candy melts for decorating the faces.
