Description

This Irish Apple Crumble Cake combines the comforting flavors of apple crumble with the moist texture of a cake. It’s a delightful dessert perfect for any occasion.

Ingredients

Scale
  • For the Cake:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 3 medium apples, peeled, cored, and diced (Granny Smith or similar)
  • For the Crumble:
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  5. Gently fold in the diced apples.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Prepare the Crumble: In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Sprinkle the crumble topping evenly over the cake batter.
  9. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan before slicing and serving.

Notes

  • For extra flavor, add a teaspoon of ground cinnamon to the cake batter.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
  • You can substitute the buttermilk with a mixture of 1 cup of milk and 1 tablespoon of lemon juice or white vinegar. Let it sit for 5 minutes before using.
  • Store leftover cake in an airtight container at room temperature for up to 3 days.
