  • 1 cup granulated sugar

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup packed light brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 3/4 cups hot water

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, 1/4 cup cocoa powder, baking powder, and salt.
  3. Add the milk, oil, and vanilla extract. Beat with an electric mixer until well combined.
  4. Pour the batter into the prepared pan.
  5. In a separate bowl, whisk together the brown sugar and remaining 1/2 cup cocoa powder. Sprinkle this mixture evenly over the batter in the pan.
  6. Pour the hot water carefully over the cocoa-sugar mixture. Do not stir.
  7. Bake for 35-40 minutes, or until the cake is set and the sauce is bubbling. The cake will be on top, and the sauce will be at the bottom.
  8. Let cool slightly before serving. Serve warm, with a scoop of vanilla ice cream or whipped cream, if desired.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • Don’t stir the hot water into the cocoa-sugar mixture, as this is what creates the sauce.
  • You can add a handful of chocolate chips to the batter for extra chocolatey goodness.
