Ingredients
Scale
- 1 ripe pineapple, peeled, cored, and sliced into 1-inch thick rings
- 2 tablespoons unsalted butter, melted
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- For the Caramel Sauce:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream, warmed
- 4 tablespoons unsalted butter, cut into pieces
- 1/4 teaspoon sea salt
Instructions
- Prepare the Pineapple: In a bowl, whisk together the melted butter, brown sugar, cinnamon, and salt. Brush both sides of the pineapple rings with this mixture.
- Grill the Pineapple: Preheat your grill to medium-high heat. Grill the pineapple rings for about 3-4 minutes per side, or until grill marks appear and the pineapple is tender.
- Make the Caramel Sauce: In a medium saucepan over medium heat, combine the sugar and water. Cook, without stirring, until the sugar dissolves and turns a golden amber color (about 5-7 minutes).
- Add the Cream: Carefully and slowly whisk in the warmed heavy cream (the mixture will bubble up). Whisk constantly until smooth.
- Finish the Caramel: Remove from heat and whisk in the butter and sea salt until the butter is melted and the sauce is smooth.
- Serve: Place grilled pineapple rings on a plate and drizzle generously with caramel sauce. Serve immediately.
Notes
- For extra flavor, add a pinch of cayenne pepper to the caramel sauce.
- You can prepare the caramel sauce ahead of time and reheat it gently before serving.
- Serve with a scoop of vanilla ice cream for an even more decadent dessert.
