Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/4 teaspoon ground cinnamon
  • Vanilla ice cream, for serving
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Preheat your grill to medium heat.
  2. In a small bowl, whisk together the olive oil, honey, and cinnamon.
  3. Brush the cut sides of the peaches with the honey mixture.
  4. Place the peaches cut-side down on the grill. Grill for 3-4 minutes, or until grill marks appear and the peaches are slightly softened.
  5. Flip the peaches and grill for another 2-3 minutes, or until heated through.
  6. Remove the peaches from the grill.
  7. Serve immediately with a scoop of vanilla ice cream and garnish with fresh mint leaves, if desired.

Notes

  • For a richer flavor, you can use brown sugar instead of honey.
  • Feel free to add a sprinkle of chopped nuts, such as pecans or walnuts.
  • If you don’t have a grill, you can cook the peaches in a grill pan or even a regular skillet.
