This gluten-free apple crumble cake combines the comforting flavors of apple crumble with the moistness of a cake. It’s a perfect dessert for any occasion, especially during apple season!

Ingredients

Scale
  • For the Cake:
  • 1 1/2 cups gluten-free all-purpose flour blend
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 2 medium apples, peeled, cored, and diced
  • For the Crumble:
  • 1/2 cup gluten-free all-purpose flour blend
  • 1/4 cup packed brown sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/2 tsp ground cinnamon
  • 1/4 cup rolled oats (ensure gluten-free)

Instructions

  1. Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  5. Gently fold in the diced apples.
  6. Pour the batter into the prepared cake pan.
  7. Make the Crumble: In a separate bowl, combine the gluten-free flour, brown sugar, cinnamon, and oats.
  8. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  9. Sprinkle the crumble topping evenly over the cake batter.
  10. Bake: Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  12. Serve and enjoy!

Notes

  • For a richer flavor, use brown butter in the cake.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
  • Ensure all ingredients, especially oats, are certified gluten-free.
