- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 can (12 oz) evaporated milk
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup (2 sticks) unsalted butter
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 1/2 cups shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine cake mix, water, oil, and eggs. Beat with an electric mixer for 2 minutes.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- While the cake is baking and cooling, prepare the frosting: In a medium saucepan, combine evaporated milk, granulated sugar, brown sugar, and butter. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
- Remove from heat and whisk in egg yolks and vanilla extract. Stir in coconut and pecans.
- Let the frosting cool slightly, then spread evenly over the cooled cake.
- Refrigerate for at least 1 hour before serving.
