- For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 1/4 cup ice water
- For the Coconut Pecan Filling:
- 1 cup evaporated milk
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup chopped pecans
- For the Chocolate Ganache:
- 6 ounces semi-sweet chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Make the Crust: Preheat oven to 350°F (175°C). In a food processor, combine flour, sugar, and salt. Pulse to mix. Add cold butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, pulsing until the dough just comes together.
- Press the dough evenly into a 9×13 inch baking pan. Bake for 15-20 minutes, or until golden brown. Let cool slightly.
- Make the Coconut Pecan Filling: In a saucepan, combine evaporated milk, sugar, and butter. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
- In a separate bowl, whisk the egg yolks. Gradually whisk a little of the hot milk mixture into the egg yolks to temper them. Then, pour the egg yolk mixture back into the saucepan.
- Cook, stirring constantly, until the mixture thickens slightly, about 2-3 minutes. Remove from heat and stir in vanilla extract, coconut, and pecans.
- Pour the coconut pecan filling over the baked crust.
- Bake for 20-25 minutes, or until the filling is set. Let cool completely.
- Make the Chocolate Ganache: In a heatproof bowl, combine chopped chocolate and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Pour the chocolate ganache over the cooled coconut pecan filling.
- Refrigerate for at least 1 hour, or until the ganache is set.
- Cut into bars and serve.
Notes
- For a richer crust, use all butter.
- Adjust sweetness of ganache with more or less chocolate.
- Store leftover bars in an airtight container in the refrigerator for up to 3 days.
