- 1 box (15.25 ounces) German chocolate cake mix
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1 cup shredded sweetened coconut
- Coconut Pecan Frosting:
- 1 cup (2 sticks) unsalted butter
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans
Instructions
- Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour a 10-12 cup bundt pan.
- In a large bowl, combine the cake mix, buttermilk, oil, eggs, and vanilla extract. Beat with an electric mixer until well combined, about 2 minutes.
- Fold in the chopped pecans and shredded coconut.
- Pour batter into the prepared bundt pan.
- Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Make the Coconut Pecan Frosting: In a medium saucepan, combine butter, granulated sugar, brown sugar, and evaporated milk. Bring to a boil over medium heat, stirring constantly.
- Reduce heat and simmer for 5 minutes, stirring occasionally.
- Remove from heat and stir in vanilla extract, coconut, and pecans.
- Let the frosting cool slightly.
- Assemble: Pour the warm frosting over the cooled bundt cake. Let the frosting set before serving.
Notes
- For a richer flavor, use dark chocolate cake mix.
- To toast the pecans and coconut, bake them on a baking sheet at 350°F (175°C) for 5-7 minutes, or until golden brown.
- If you prefer a thinner frosting, add a tablespoon or two of milk to the frosting while it’s cooling.
- Store leftover cake in an airtight container at room temperature for up to 3 days.
