  • Coconut Pecan Frosting:
  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans

Instructions

  1. Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour a 10-12 cup bundt pan.
  2. In a large bowl, combine the cake mix, buttermilk, oil, eggs, and vanilla extract. Beat with an electric mixer until well combined, about 2 minutes.
  3. Fold in the chopped pecans and shredded coconut.
  4. Pour batter into the prepared bundt pan.
  5. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
