- 2 cups granulated sugar
- 1 cup all-purpose flour

- 1 teaspoon vanilla extract
- 4 large eggs
Coconut Pecan Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 3 cups powdered sugar
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a saucepan, melt butter and unsweetened chocolate over low heat, stirring until smooth. Remove from heat.
- Stir in sugar, flour, cocoa powder, and salt.
- Beat in vanilla extract and eggs until just combined. Do not overmix.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- While brownies are baking, prepare the frosting: In a large bowl, cream together butter and powdered sugar until light and fluffy.
- Beat in evaporated milk and vanilla extract.
- Stir in coconut and pecans.
- Once brownies are cooled, frost with coconut pecan frosting.
- Cut into squares and serve.
Notes
- For a richer flavor, use dark chocolate.
- If you don’t have evaporated milk, you can substitute with regular milk.
