Ingredients

  • 1 cup all-purpose flour

  • 4 large eggs

Coconut Pecan Frosting:

  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a saucepan, melt butter and unsweetened chocolate over low heat, stirring until smooth. Remove from heat.
  3. Stir in sugar, flour, cocoa powder, and salt.
  4. Beat in vanilla extract and eggs until just combined. Do not overmix.
  5. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  6. While brownies are baking, prepare the frosting: In a large bowl, cream together butter and powdered sugar until light and fluffy.
  7. Beat in evaporated milk and vanilla extract.
  8. Stir in coconut and pecans.
  9. Once brownies are cooled, frost with coconut pecan frosting.
  10. Cut into squares and serve.
