Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Be careful not to overmix; a few lumps are okay.
- Heat about 2 inches of vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C).
- Once the oil is hot, pour the batter into a squeeze bottle or a piping bag with a round tip.
- Carefully squeeze the batter into the hot oil in a circular or freeform pattern.
- Fry for 2-3 minutes per side, or until golden brown and crispy.
- Use a slotted spoon to remove the funnel cake from the oil and place it on a wire rack to drain excess oil.
- Dust generously with powdered sugar and add your favorite toppings.
- Serve immediately and enjoy!
